Bluey Apple Oat Bars

Made with Crunch Pak x Bluey Organic Apple Slices, these oat bars bring lunchbox balance without the sugar overload.
Ingredients:
-1 ½ cups Bluey Organic Apple Slices, diced
-2 cups old-fashioned rolled oats
-½ tsp cinnamon
-½ tsp salt
-1 tsp baking powder
-2 large eggs
-1 cup milk (dairy or non-dairy)
-¼ cup maple syrup or honey
-1 tsp vanilla extract
-¼ cup melted coconut oil or butter
Directions:
Preheat oven to 350°F. Line an 8 inch baking pan with parchment or lightly grease. In a large bowl, combine oats, cinnamon, salt, and baking powder. In a separate bowl, whisk together eggs, milk, maple syrup, vanilla, and melted coconut oil. Add wet ingredients to dry and stir to combine. Fold in chopped apples. Pour mixture into prepared pan and spread evenly. Bake for 25–30 minutes, until set and lightly golden on top. Let cool completely, then slice into bars. Store in the fridge up to 5 days or freeze for future lunchbox packing.
